Chocolate Orange Peel Hot Cross Buns

Ingredients

  • 400g bread flour
  • 50g cocoa powder
  • 50g sugar
  • 5g salt
  • 7g yeast
  • 1 tsp mixed spices
  • 1 tsp cardamom
  • 200ml milk + 1 egg
  • 50g butter
  • 100g dark chocolate
  • 100g orange peel

Cross:

  • 2 tbsp flour + 2 tbsp water

Preparation

  1. Combine bread flour, cocoa powder, sugar, salt, yeast, and spices in the bowl of the Cuisinart SM-50.
  2. Add milk and egg, mix on low speed until combined.
  3. Knead on medium speed for 5 minutes.
  4. Add butter gradually and knead for another 8–10 minutes until smooth and elastic.
  5. Mix in dark chocolate and candied orange peel until evenly incorporated.
  6. Cover and let dough rise for 1–1.5 hours, until doubled in size.
  7. Divide into 9–10 portions, shape into smooth balls, and place on a baking tray.
  8. Let rise again for 30–45 minutes until puffy.
  9. Mix flour and water into a paste and pipe crosses on top.
  10. Bake in the Cuisinart TOA-28HK at 180°C (356°F) for 15–20 minutes, rotating the tray halfway through.
  11. Brush with sugar syrup or honey while warm if desired.
