Chocolate Orange Peel Hot Cross Buns
Ingredients
- 400g bread flour
- 50g cocoa powder
- 50g sugar
- 5g salt
- 7g yeast
- 1 tsp mixed spices
- 1 tsp cardamom
- 200ml milk + 1 egg
- 50g butter
- 100g dark chocolate
- 100g orange peel
Cross:
- 2 tbsp flour + 2 tbsp water
Preparation
- Combine bread flour, cocoa powder, sugar, salt, yeast, and spices in the bowl of the Cuisinart SM-50.
- Add milk and egg, mix on low speed until combined.
- Knead on medium speed for 5 minutes.
- Add butter gradually and knead for another 8–10 minutes until smooth and elastic.
- Mix in dark chocolate and candied orange peel until evenly incorporated.
- Cover and let dough rise for 1–1.5 hours, until doubled in size.
- Divide into 9–10 portions, shape into smooth balls, and place on a baking tray.
- Let rise again for 30–45 minutes until puffy.
- Mix flour and water into a paste and pipe crosses on top.
- Bake in the Cuisinart TOA-28HK at 180°C (356°F) for 15–20 minutes, rotating the tray halfway through.
- Brush with sugar syrup or honey while warm if desired.
